Lets Eat… 4th of July!

We Love Fourth of July!!

We love the  Fourth of July!!!  We love spending the day with my family and friends, we love pool parties, barbecues, and fireworks!  We love celebrating the United States, and our Freedom!  And, we REALLY LOVE  celebrating all the people who valiantly fought for our Independence so long ago, and all those who continue to fight for freedom today.

Both Jen and Lalani LOVE a good Hamburger and our friend; Melissa Stadler makes one of the best there is.  We can’t think of a better star for your 4th of July party, than her Dragon Slayer Burger.  Check it out here; Modern Honey’s Dragon Slayer.

Jen’s 4th of July Favorites

For me, a few things are staple traditions wherever we are celebrating, in fact, my family started texting me days ago to make sure these menu items would appear at our festivities.

I am excited to pass on a few of my favorite recipes to you.  We are a Red Meat Family (it’s my Dads fault:), Pasta Salad just belongs at a Summer party, and the Strawberry Salad is cool, and refreshing.

Add  a hamburger, watermelon, and homemade Ice Cream, and you have the perfect menu!

Beef Brisket (From the kitchen of Jerry King)

*1 Large Beef Brisket

*Rub with garlic, taco seasoning packets, pepper, a little chili seasoning (not to much)

*Lay in a large foil tin or baking pan.  Add sliced onions all over the top.

*Pour beef broth or beef bouillon which has been dissolved in water, into the pan.

Bake at 325 degrees for a long time!  (until you can pull apart with a fork)

Cool a little and slice across grain… put back in the broth and serve.


Pasta Salad 

(I don’t know where this came from, and I cannot list how many people in my family LOVE it, there are too many!)

1 PKG. Italian Dressing Seasoning

1 1/2 Cups Mayo

2 TBS. Dijon Mustard

2 TBS. Vinegar

1 PKG. Spiral Noodles (can substitute Gluten Free spirals)

1 head Broccoli

1 bunch of Green Onions

1 Bag Frozen Peas

1 PKG. Cheese cubed 


*Boil the noodles per directions on the package

*Cut all the vegetables into small pieces and put in a Salad Bowl

*Mix the Italian Seasoning, Mayo, Dijon Mustard, and Vinegar together and set aside.

*If your cheese is not cubed, cut it into small squared pieces.

*After noodles are done and cooled, add to the bowl with  vegetables, frozen peas,  cheese, and stir in the sauce.  

I always double this recipe and serve about 15 to 20


Strawberry Spinach Salad

(maybe from my Cousin Courtney, I really have no idea:)

1 Bag Spinach

1 Head Romaine Lettuce

1 Head Red Lettuce

1 bag of Craisins 

1 bag of Sugared Almonds (you can also buy slivered almonds, pour a little oil in a pan with sugar, and saute them yourself)


Put it all in a bowl!

Dressing; Put all ingredients in the blender and puree

2 TSP Mustard

3/4 C. Red Wine Vinegar

1/2 C. Oil (I prefer Grape seed)

1 Small Red Onion

1 1/2 tsp. of Salt

1 1/2 TBS. Poppy Seeds (put these in last)

*Pour over the Salad, Toss, and Serve Immediately 

Lalani’s 4th of July Favorites

In my house, I’m always in charge of the baking.  My husband is a really good cook and so he takes care of all of the important things like yummy hamburgers, pulled pork, or brisket.  I am in charge of dessert and anything fun.  These two recipes have become staples at our 4th of July celebrations.  In fact, most years we are out of town on 4th of July; but we still make these wherever we are.


Kraft Jello Poke Cake (American Flag Style)

(This one is easy, its right off the website; but we love it just the same)

1 pkg. (2-layer size) white cake mix
1 cup boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
1/2 cup cold water
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

* 80z of Fresh Raspberries  & 4 oz of Fresh Blueberries for the flag


Prepare cake batter and bake as directed on package for 13×9-inch pan. Cool cake in pan 15 min. Pierce cake with large fork at 1/2-inch intervals.

Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in cold water; pour over cake. Refrigerate 3 hours.

Frost cake with COOL WHIP. Refrigerate 1 hour.

Top with 7 lines of Raspberries and 50 blueberries to make a flag design. My kids love to help with this part.  Enjoy!!!



Firework Float

(This is super easy, and my kids LOVE it.  Its so fun and so so easy, the hardest part is finding the pop rocks.)

2 Liter of Strawberry Fanta

Vanilla Bean Ice Cream

Blue Pop Rocks

Clear plastic cups or glasses


*Scoop two scoops of Vanilla Bean Ice Cream in a cup. Pour Strawberry Soda until the cup is 3/4 of the way full.  Top with Pop Rocks.   When the Pop Rocks hit the soda they will start to pop and it looks like fireworks.  My kids love it. Enjoy!!
